Ingredients
Scale
Gathering your ingredients is the first step to any successful meal. Here’s what you’ll need for this flavorful dish:
- 1 pound boneless, skinless chicken breasts, diced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup orzo pasta
- 1 red bell pepper, diced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
If you need to switch things up, feel free to substitute the chicken with shrimp or tofu. And if you’re out of Cajun seasoning, a mix of paprika, garlic powder, and cayenne pepper will do the trick!
Instructions
- Start by seasoning the diced chicken with Cajun seasoning, ensuring each piece is well-coated.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the orzo and diced bell pepper. Sauté for about 2 minutes until the orzo is slightly toasted.
- Add the garlic and cook for another 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Return the chicken to the skillet and cook until the orzo is tender and the sauce has thickened, roughly 10-12 minutes.
- Stir in the Parmesan cheese, allowing it to melt into the sauce. Season with salt and pepper to taste.
- Garnish with fresh parsley before serving. Enjoy your spicy, creamy creation!
