  • 1 pound of large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning (store-bought or homemade)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 ounces fettuccine pasta
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • Lemon wedges for serving (optional)

If you don’t have heavy cream, a mixture of milk and butter can work in a pinch. And if Parmesan is too sharp for your taste, feel free to substitute with Romano or Asiago cheese.

Instructions

  1. Bring a large pot of salted water to a boil, and cook the fettuccine pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add the olive oil. Once hot, toss in the shrimp and sprinkle them with Cajun seasoning. Sauté until the shrimp are pink and cooked through, about 3-4 minutes. Remove the shrimp and set aside.
  3. In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds. Pour in the heavy cream and let it simmer for 2-3 minutes, allowing it to thicken slightly.
  4. Gradually stir in the Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste.
  5. Add the cooked pasta to the skillet, tossing to coat it evenly in the sauce. Return the shrimp to the skillet and mix everything together.
  6. Garnish with chopped parsley and serve with lemon wedges if desired.

One of my favorite things about this recipe is how adaptable it is. You can adjust the spice level to suit your family’s taste by altering the amount of Cajun seasoning.
