  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • Salt and pepper to taste
  • Chopped parsley, for garnish

If you’re out of Cajun seasoning, a mix of paprika, cayenne, garlic powder, and thyme works wonders. And if shrimp isn’t your thing, diced chicken or sausage makes a great substitute. Remember, cooking at home is about using what you have and making it work.

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and sprinkle with Cajun seasoning. Cook until they’re pink and opaque, about 2-3 minutes per side. Remove from skillet and set aside.
  2. Add the remaining olive oil to the skillet. Toss in the diced onion and bell peppers, sautéing until they’re soft and fragrant, around 5 minutes.
  3. Stir in the minced garlic and rice, cooking for an additional 2 minutes to toast the rice slightly.
  4. Pour in the chicken broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Add the cooked shrimp back into the skillet. Stir to combine, allowing the flavors to meld for a couple of minutes. Season with salt and pepper to taste.
  6. Garnish with chopped parsley before serving.
