Ingredients
Scale
Let’s keep it simple, shall we? You probably have most of these ingredients in your pantry already. And if not, I’ve got some handy substitutes for you!
- 1 pound chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1/4 cup honey
- 3 tablespoons soy sauce
- 1 tablespoon sriracha (adjust to taste)
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 red bell pepper, sliced
- 1 cup cooked rice (white or brown)
- 1/4 cup green onions, chopped
- Sesame seeds for garnish
If you don’t have sriracha, any hot sauce will do. And if ginger isn’t your thing, a pinch of ground ginger can substitute in a pinch.
Instructions
Ready to whip up some magic? Follow these simple steps, and you’ll have dinner sorted in no time.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
- In the same skillet, add the garlic and ginger. Sauté for about 30 seconds until fragrant.
- Reduce the heat to medium and add the honey, soy sauce, and sriracha. Stir well to combine.
- Return the chicken to the skillet, tossing it in the sauce. Let it simmer for about 5 minutes until the sauce thickens slightly.
- Add the sliced red bell pepper and cook for another 2-3 minutes, until tender-crisp.
- Serve over a bed of cooked rice and garnish with green onions and sesame seeds.
Pro tip: Keep an eye on that sauce—it can go from perfectly thick to too sticky in a blink. And don’t be afraid to adjust the sriracha to match your spice preference.
