Ingredients
Scale
Gather these simple ingredients, most of which you might already have in your pantry:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 3 fresh jalapeños, thinly sliced
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon fresh lime juice
- 1/4 cup fresh cilantro, chopped
If you’re not a fan of too much heat, you can substitute the jalapeños with a milder pepper. And if you’re dairy-free, swap out the heavy cream for coconut milk—it adds a lovely, subtle sweetness.
Instructions
Ready to make some magic? Follow these steps, and you’ll have a dish that’s bound to become a family favorite:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, smoked paprika, and garlic powder. Make sure to coat them evenly for the best flavor.
- In an oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear them for about 3 minutes on each side, until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the sliced jalapeños and red bell pepper. Sauté for about 5 minutes until they start to soften.
- Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream and lime juice, mixing well to combine.
- Return the chicken to the skillet, nestling it among the peppers. Spoon some of the sauce over the chicken.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce is bubbling.
- Garnish with fresh cilantro before serving. Don’t forget to taste the sauce and adjust the lime juice or salt if needed—it’s all about that perfect balance!
