- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper, to taste
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- In a small bowl, combine brown sugar, soy sauce, olive oil, garlic, ginger, and red pepper flakes. Stir until the sugar has dissolved.
- Place the chicken breasts in the baking dish and season with salt and pepper. Pour the sauce over the chicken, ensuring each piece is well-coated.
- Scatter the pineapple chunks over and around the chicken. For more pineapple flavor, add some of the pineapple juice in the mix.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through. If you prefer a thicker sauce, remove the chicken when done and stir in the cornstarch mixture into the sauce. Return to the oven for an additional 5 minutes.
- Once done, let it rest for a few minutes before serving. This allows the juices to redistribute, keeping the chicken tender and moist.
