  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a small bowl, combine brown sugar, soy sauce, olive oil, garlic, ginger, and red pepper flakes. Stir until the sugar has dissolved.
  3. Place the chicken breasts in the baking dish and season with salt and pepper. Pour the sauce over the chicken, ensuring each piece is well-coated.
  4. Scatter the pineapple chunks over and around the chicken. For more pineapple flavor, add some of the pineapple juice in the mix.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through. If you prefer a thicker sauce, remove the chicken when done and stir in the cornstarch mixture into the sauce. Return to the oven for an additional 5 minutes.
