Ingredients
Scale
Here’s what you’ll need to create this delicious dish. Feel free to substitute according to what’s available in your pantry:
- 1 pound flank steak, sliced thin
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 cups cooked white rice (substitute with brown rice for a healthier option)
- 1 cup queso cheese sauce
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
Follow these simple steps to create a meal that’s not only satisfying but also a little reminiscent of the bustling, love-filled kitchens I grew up in:
- Season the sliced steak with salt, black pepper, and garlic powder.
- Heat the olive oil in a large skillet over medium-high heat. Add the steak slices and cook for 3-4 minutes on each side until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Sauté for about 5 minutes, or until they are soft and slightly caramelized.
- While the vegetables are cooking, warm the queso cheese sauce in a separate saucepan over low heat, stirring occasionally.
- Combine the cooked rice, steak, and sautéed vegetables in a large bowl. Add the lime juice and toss everything together.
- Drizzle the warm queso cheese sauce over the top of the bowl, making sure to cover the ingredients evenly.
- Garnish with fresh cilantro before serving.
