- Heat olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side, or until they’re golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the BBQ sauce, soy sauce, and honey. Stir well and let it simmer for about 2 minutes to thicken slightly.
- Slice the cooked chicken into strips and return it to the skillet, tossing it in the sauce until well coated. This is where those sticky, delicious flavors come together.
- In a separate pot, bring the corn and bell pepper to a quick sauté over medium heat for about 3-4 minutes until tender. Mix them into the cooked rice.
