- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 8 ounces of noodles (rice noodles or your favorite kind)
- 1/4 cup soy sauce
- 2 tablespoons honey
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- 1 teaspoon grated ginger
- 1/4 cup sliced green onions
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Feel free to swap chicken thighs for chicken breast if that’s what you have on hand. And if you’re out of honey, brown sugar works as a sweet alternative. The beauty of home cooking is making it work with what you have, just like my mom did.
Instructions
- Heat the olive oil in a large pan over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned, about 5-7 minutes.
- While the chicken cooks, prepare the noodles according to the package instructions. Drain and set aside.
- Reduce the pan’s heat to medium and add the minced garlic and grated ginger to the chicken. Stir for about 1 minute until fragrant.
- In a small bowl, mix soy sauce, honey, and the cornstarch slurry. Pour this sauce over the chicken and let it simmer until it thickens, around 2-3 minutes.
- Add the cooked noodles to the pan, tossing everything together until the noodles are well coated with the sticky sauce.
- Finish with sesame oil, green onions, and a sprinkle of sesame seeds for a bit of crunch and color.
And just like that, you’ve got a dish that’s ready to serve. One of my personal tips is to taste as you go—adjust the seasoning to your family’s liking, because everyone’s palate is a little different!
