Ingredients
Scale
Gathering the right ingredients for this dish is as simple as a quick trip to your local grocery store. Here’s what you’ll need:
- 4 salmon fillets (about 6 ounces each)
- 1/2 cup soy sauce (or tamari for a gluten-free option)
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch
- 1/4 cup water
- 2 cups cooked jasmine rice
- 1 cup steamed broccoli florets
- 1/2 cup thinly sliced green onions
- 1 tablespoon sesame seeds
Feel free to substitute ingredients based on what you have on hand. For example, swap out the broccoli for any other veggie your family loves or use maple syrup instead of honey.
Instructions
Cooking this dish is a breeze. Here’s how you can make it happen:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Bring to a simmer over medium heat.
- In a small bowl, mix cornstarch with water. Add this slurry to the saucepan and stir until the sauce thickens. Remove from heat.
- Place salmon fillets on the prepared baking sheet. Brush generously with the teriyaki sauce, reserving some for later.
- Bake for 12-15 minutes, or until the salmon flakes easily with a fork. I like to baste the salmon halfway through for extra flavor.
- While the salmon is baking, prepare your rice and steam the broccoli.
- Assemble the bowls by placing rice at the bottom, followed by broccoli and salmon. Drizzle with remaining teriyaki sauce and garnish with green onions and sesame seeds.
Tip from my kitchen: Don’t be afraid to adjust the sweetness or saltiness of the teriyaki sauce to fit your family’s preferences. Cooking is all about making it your own!
