- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, hulled and sliced
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
If you’re out of strawberries, feel free to substitute with whatever berries are in season. Blueberries or raspberries work wonderfully here too!
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
- In a bowl, combine the flour and granulated sugar. Stir in the melted butter until the mixture resembles wet sand.
- Press the dough evenly into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden. Let it cool completely.
- While the crust is cooling, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form. Spread this creamy mixture over the cooled crust.
- In a small saucepan, combine the sliced strawberries, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens and the strawberries are soft, about 5-7 minutes. Allow to cool slightly.
- Spread the strawberry mixture over the cream layer. Chill the bars in the refrigerator for at least 2 hours, or until set.
- Once chilled, lift the bars out using the parchment overhang and cut into squares. Enjoy the fruits of your labor!
