- 1 boneless leg of lamb (about 4–5 pounds)
- 2 tablespoons olive oil

- 1 cup breadcrumbs
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped

- 1/2 cup chicken broth
- 2 tablespoons lemon juice
- Optional: 1/4 cup pine nuts for added crunch
Feel free to substitute the feta with goat cheese for a tangier twist or use vegetable broth if you prefer a different flavor profile.
Instructions
- Preheat your oven to 375°F (190°C). While the oven warms up, let’s prepare the stuffing.
- In a medium bowl, combine the breadcrumbs, feta cheese, sun-dried tomatoes, garlic, rosemary, thyme, and a pinch of salt and pepper. Mix well to ensure all ingredients are evenly distributed.
- Lay the lamb flat on a clean surface, and spread the stuffing mixture evenly across the meat. If you’re feeling adventurous like my dad often was, sprinkle some pine nuts for an extra layer of flavor.
- Carefully roll the lamb back into a roast and secure it with kitchen twine at 2-inch intervals to hold the stuffing in place.
- Heat olive oil in a large ovenproof pan over medium-high heat. Sear the lamb on all sides until browned, about 4-5 minutes per side. This step locks in the juices and creates a beautiful crust.
- Once seared, transfer the pan to the preheated oven. Roast the lamb for 60-75 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare doneness.
- Remove the lamb from the oven and let it rest for 10-15 minutes before slicing. This rest period is crucial for juicy, tender slices.
- While the lamb rests, deglaze the pan with chicken broth and lemon juice over medium heat, scraping up any browned bits. Simmer for 2-3 minutes to create a simple yet flavorful sauce.
