Here’s what you’ll need to bring these potato cakes to life:
- 3 large potatoes, peeled and boiled
- 1 cup shredded cheese (cheddar or mozzarella work great)
- 1/4 cup chopped green onions
- 1/2 cup flour
- 1 egg
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/4 cup breadcrumbs
- 2 tablespoons vegetable oil for frying
If you’re feeling adventurous, substitute a mix of cheeses or toss in some cooked bacon bits for extra flavor!
Instructions
- Mash the boiled potatoes in a large bowl until smooth. Add the egg, flour, garlic powder, salt, and pepper. Mix until well combined and the dough is cohesive.
- Divide the potato mixture into equal portions, about the size of a golf ball. Flatten each portion into a disc.
- Place a small amount of shredded cheese and green onions in the center of each disc. Fold the edges over the filling and seal tightly.
- Gently press the filled potato balls into flat cakes.
- Coat each cake lightly with breadcrumbs.
- Heat vegetable oil in a skillet over medium heat. Fry the cakes for about 3-4 minutes on each side, or until golden brown and crispy.
- Transfer to a paper-towel-lined plate to drain excess oil. Serve hot and enjoy!
