Ingredients
Scale
- 8 slices of your favorite bread (sourdough or whole wheat works great)
- 1 cup ricotta cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Butter for spreading
If you’re out of mozzarella, feel free to use cheddar or any melty cheese you have on hand. And if sun-dried tomatoes aren’t your thing, roasted red peppers make a fantastic substitute!
Instructions
- Start by spreading a generous layer of ricotta cheese on one side of each slice of bread. This creamy base is what dreams are made of.
- Sprinkle the chopped sun-dried tomatoes over the ricotta, ensuring every bite is packed with their tangy flavor.
- Layer the fresh spinach leaves on top of the tomatoes. Don’t worry if they look like a lot; they’ll wilt down beautifully.
- Combine the mozzarella and Parmesan cheeses, then sprinkle a good handful over the spinach. A little cheese never hurt anyone, right?
- Season with garlic powder, salt, and pepper to taste.
- Top with another slice of bread, ricotta side down, to seal in all that goodness.
- Heat a non-stick skillet over medium heat. Spread butter on the outside of each sandwich.
- Place the sandwiches in the skillet, pressing down gently with a spatula. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
- Remove from the skillet and let them cool for a minute before slicing in half. Trust me, this moment of anticipation is worth it.
