If you’re out of mozzarella, feel free to use cheddar or any melty cheese you have on hand. And if sun-dried tomatoes aren’t your thing, roasted red peppers make a fantastic substitute!

Instructions

  1. Start by spreading a generous layer of ricotta cheese on one side of each slice of bread. This creamy base is what dreams are made of.
  2. Sprinkle the chopped sun-dried tomatoes over the ricotta, ensuring every bite is packed with their tangy flavor.
  3. Layer the fresh spinach leaves on top of the tomatoes. Don’t worry if they look like a lot; they’ll wilt down beautifully.
  4. Combine the mozzarella and Parmesan cheeses, then sprinkle a good handful over the spinach. A little cheese never hurt anyone, right?
  5. Season with garlic powder, salt, and pepper to taste.
  6. Top with another slice of bread, ricotta side down, to seal in all that goodness.
  7. Heat a non-stick skillet over medium heat. Spread butter on the outside of each sandwich.
  8. Place the sandwiches in the skillet, pressing down gently with a spatula. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
