- 1 1/2 pounds boneless, skinless chicken thighs
- 1 cup canned pineapple chunks, drained
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro (optional, for garnish)
Feel free to substitute chicken breasts if you prefer a leaner option. For a little extra heat, add a pinch of red pepper flakes.
Instructions
- Preheat your oven to 400°F. Line a baking dish with parchment paper or lightly grease it with cooking spray.
- In a small bowl, whisk together the sweet chili sauce, soy sauce, olive oil, lime juice, and garlic powder.
- Season the chicken thighs with salt and pepper, then place them in the prepared baking dish.
- Pour the sauce mixture over the chicken, ensuring each piece is well coated. Scatter the pineapple chunks on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the glaze is bubbling and slightly caramelized.
- Remove from the oven and let it rest for a few minutes. Garnish with chopped cilantro if desired.
