- Preheat your oven to 375°F. Line a baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined, being careful not to overwork the meat.
- Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake the meatballs for 20-25 minutes, or until they are browned and cooked through.
- While the meatballs are baking, heat olive oil in a large skillet over medium heat. Add pineapple chunks and cook for 2-3 minutes until they begin to caramelize.
- Stir in sweet chili sauce and soy sauce, and bring to a gentle simmer. Allow the sauce to thicken slightly, about 3-4 minutes.
- Once the meatballs are done, add them to the skillet, tossing to coat them thoroughly in the sweet chili pineapple sauce.
- Let the meatballs simmer in the sauce for an additional 5 minutes, allowing all those delicious flavors to meld together.
