- 1 pound of flank steak, thinly sliced
- 2 large sweet potatoes, peeled and cubed
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: 1 teaspoon smoked paprika for extra flavor
Instructions
- Preheat your oven to 400°F (200°C). Make sure your oven rack is in the center position for even cooking.
- In a large bowl, combine olive oil, balsamic vinegar, garlic, thyme, salt, pepper, and smoked paprika if using. Whisk together until well blended.
- Add the sliced steak to the marinade and toss until fully coated. Let it sit for at least 10 minutes to absorb the flavors.
- On a large baking sheet, spread out the sweet potatoes, bell pepper, and onion. Drizzle with a little olive oil and season with salt and pepper.
- Place the marinated steak slices on top of the vegetables. Spread them out evenly to ensure they cook properly.
- Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the steak is cooked to your liking. I like to check midway and give everything a gentle toss for even browning.
- Once done, remove from the oven and let it rest for a few minutes before serving. This helps all the flavors to meld together beautifully.
