  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1 teaspoon smoked paprika for extra flavor

Instructions

  1. Preheat your oven to 400°F (200°C). Make sure your oven rack is in the center position for even cooking.
  2. In a large bowl, combine olive oil, balsamic vinegar, garlic, thyme, salt, pepper, and smoked paprika if using. Whisk together until well blended.
  3. Add the sliced steak to the marinade and toss until fully coated. Let it sit for at least 10 minutes to absorb the flavors.
  4. On a large baking sheet, spread out the sweet potatoes, bell pepper, and onion. Drizzle with a little olive oil and season with salt and pepper.
