Ingredients
Scale
The beauty of this recipe lies in its simplicity. You don’t need a gourmet pantry to make it happen. Here’s what you’ll need:
- 1 pound of chicken breast, cut into bite-sized pieces
- 1/4 cup soy sauce
- 3 tablespoons honey (or brown sugar as a substitute)
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 2 cups cooked rice
- 1 tablespoon sesame seeds
- 2 green onions, chopped
- 1 cup broccoli florets
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Don’t have rice vinegar? A splash of apple cider vinegar will also do the trick. And if broccoli isn’t your family’s favorite, swap it out for your preferred veggie.
Instructions
Let’s get into the heart of it—making this delightful dish. Here’s how you can do it:
- In a large skillet, heat the sesame oil over medium heat. Add the chicken pieces and cook until they’re browned on all sides, about 5-7 minutes.
- While the chicken is cooking, mix together the soy sauce, honey, garlic, ginger, and rice vinegar in a small bowl.
- Once the chicken is browned, pour the soy sauce mixture over the chicken. Let it simmer for about 5 minutes, allowing the flavors to meld.
- Add the broccoli florets to the skillet and cook for another 3-4 minutes, just until they turn vibrant green and tender.
- Stir in the cornstarch slurry and continue to cook, stirring constantly, until the sauce thickens to your desired consistency.
- Serve the chicken and broccoli over a bed of cooked rice. Sprinkle with sesame seeds and chopped green onions before serving.
One of my favorite memories is watching my kids sneak bites of broccoli while this meal was simmering—proof that even the simplest foods can create the best moments.
