Feel free to substitute the rice noodles with any noodle of your choice. Sometimes I use spaghetti or fettuccine when that’s all I have in the pantry. It’s all about using what you have and making it work for you.
Instructions
- Start by cooking the rice noodles according to the package instructions. Drain and set aside.
- In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, ginger, garlic, and red pepper flakes until smooth.
- Heat a large pan over medium heat. Add the cooked noodles and pour the peanut sauce over them.
- Toss the noodles gently to coat them evenly with the sauce. Cook for about 2-3 minutes until everything is heated through.
- Transfer the noodles to serving bowls. Top with chopped peanuts, sliced green onions, and fresh cilantro.
