Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups cornflakes, lightly crushed
- 1 cup toffee bits
- 1 cup semi-sweet chocolate chips (optional)
Feel free to substitute semi-sweet chocolate chips with dark chocolate chips for a richer flavor. If you’re out of toffee bits, chopped pecans or walnuts can add a delightful crunch.
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. This is a trick I learned from my dad—prepping early makes the process smoother.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3 minutes. This step is key for that perfect cookie texture.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. My kids love helping with this part, their little fingers eager to crack the eggs.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Slowly incorporate the dry ingredients into the wet mixture, stirring until just combined.
- Gently fold in the crushed cornflakes, toffee bits, and chocolate chips if using. This is where the magic happens—the smell of toffee always reminds me of my mom’s kitchen, a comforting blend of sweet and homey.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. My daughter always tries to sneak a taste at this point—who can blame her?
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The center will still look soft but will firm up as the cookies cool.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. I often find myself sneaking one (or two) as they cool—a little indulgence never hurt anyone.
