- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, diced
- 1 red bell pepper, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)

Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the garlic and cook for another minute, stirring frequently to prevent burning.
- Increase the heat to medium-high and add the ground turkey. Cook until browned, breaking it apart with a spatula, for about 6-8 minutes.
- Stir in the paprika, oregano, salt, and pepper. Add the potatoes and bell pepper, mixing well to coat everything with the spices.
- Pour in the chicken broth and bring to a simmer. Cover the skillet, reduce the heat to low, and let it cook for 15-20 minutes, or until the potatoes are tender.
- Remove the lid and sprinkle the shredded cheddar cheese over the top. Cover again for another 2-3 minutes until the cheese is melted and bubbly.
- Garnish with freshly chopped parsley before serving. Enjoy the savory, cheesy goodness!
