- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
- 1/2 cup fresh berries (strawberries, blueberries, or raspberries)
- 1/4 cup chocolate syrup (optional)
If you’re out of milk, a blend of yogurt and water works too. And if vanilla extract is missing from your pantry, a splash of almond extract can add a lovely twist.
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Stir until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. The batter should be slightly lumpy.
- Lightly grease the waffle iron and pour in the batter, spreading it out evenly. Close the lid and cook until the waffle is golden brown and crisp, about 5 minutes.
- Once all waffles are cooked, let them cool on a wire rack.
- To assemble, place one waffle on a serving plate, spread a layer of whipped cream over it, and top with fresh berries.
- Repeat the layers with the remaining waffles, whipped cream, and berries.
- Drizzle chocolate syrup over the top if desired, and serve immediately.
I remember the first time my kids helped me make these—they were in charge of the whipped cream and took their job very seriously. By the end, they were covered in cream and giggles, and that’s what cooking is all about.
